Iron rich fruit compote

Ingredients:

  • 1 C dried apricots

  • 3/4 C pitted dates

  • 1/2 C dried figs

  • 1 tsp powdered ginger

  • 1/2 tsp powdered clove

  • 1/4 tsp nutmeg

  • 3 Tbsp ghee

  • 3/4 C apricot, peach or apple juice

  • 1 tsp vanilla powder (optional)

Instructions

  1. Soak dried fruits and dates in water for 2 hours or overnight.

  2. Drain and chop into bite-sized pieces.

  3. Heat ghee and spices to medium heat in a heavy bottomed sauce pan and stir until fragrant.

  4. Add fruit and stir well, coating the fruit with the ghee/spice mixture.

  5. Add fruit juice and simmer on medium low heat for about 5 minutes, stirring occasionally.

Notes

* Substitute sesame oil for ghee if vegan.
